What's for dinner tonight? Jens stellar nachos!!!
Eating healthy on a budget with food restrictions can be pretty hard. My roommate Jen is an AVID couponer which makes grocery shopping pretty cheap, and she is pretty supportive of the plant based diet so she's always looking for things for me to eat (she's awesome that way.)
Tonight was a night she cooked nachos (another reason I love her she cooks for me when I'm not feeling well.) It's super quick to make and it's pretty filling.
So what do you need for JENS STELLAR NACHOS?
- Organic lime flavored tortilla chips (we like organic)
- 1 whole Avocado cut into cubes
- 1/2 cups of Cheddar Cheese
- 1 and 1/2 of Colby Jack Cheese (I know lots of cheese)
- 1 can of ranch style beans
- 1/3 cup of chopped red onions ( onions cure everything)
First you cover your pan with your tortilla chips, then drown the chips with the cheese and onions. Add another layer of tortilla chips, add more cheese, the beans, more onions and the avocado.
Now you can substitute any of the ingredients, we didn't add any sort of cream or salsa, it tastes amazing as is but I'm sure it would taste awesome with those as well. Also make sure the dog doesn't eat it.. they can't eat onions (yes Coco my dog tried to eat it, face palm)
