Going Vegetableitarian=I apparently like soups
Okay so I'm not a full vegetarian or as my sister used to call it "vegetableitarian" haha I guess she's just as much of a goofball as her older sister, but I do eat mostly a plant based diet. You can read here a little bit more about why I adopted this way of eating.
Lately I've been on a huge soup kick because 40 degrees in Southern California... golly we are going to freeze to death! Lord save us all! Just kidding I know we are super spoiled here but hey it's a good excuse. It's also really easy to get a million veggies in one maybe two servings which is pretty darn healthy. I know there is a little concern over boiling veggies and how much nutrients it looses however this mostly pertains to water vegetables such as spinach, broccoli and a few others. In my opinion it's better to eat half the nutrients than none at all because let's face it, not everyone likes raw veggies.
So what was today's soup?
Kinda a mishmash to be honest, but that's what I love about soup, you can literally put anything in add some spices and tada you are a master chef! We shall call today's the Ode to le Mushrooms!
- 2 celery stalks
- 1 carrot
- 1/2 cup peas (frozen)
- 1 clove garlic
- 5 big mushrooms (kinda went overboard)
- a handful of chopped onions
- Vegetable broth
- a touch of seasoning called Mrs Dash
- some garlic salt
- and basil (by mistake)
So obviously if you wanted to copy the recipe you can alter it to your taste, this wasn't so much to fill me up more for craving... and I just bought mushrooms and I have a sick ridiculous obsession with them because they are pretty cool. Prep time is usually about 10 minutes tops, super easy to make and if you don't eat it all at once you have leftovers! Yippy! I personally wouldn't keep it longer than a day or two in the fridge because of the mushrooms.
Ps I hope you like my cute mug as much as I do! Jen bought it for me and it seriously is my favorite thing (besides mushrooms)
